12 soft taco wraps
12 flathead tails (skinless & boneless)
3 large tomatoes
1 large red onion
Red & Green Chili
1 bunch coriander
1 tub sour cream
Chop and mix tomato, onion and avocado together along with juice from limes to make a chunky salsa.
In a large oiled fry pan, cook flathead tails on medium / high heat for approx 2-3 minutes each side.
Heat taco wraps in oven / microwave as per pack directions.
Layer the taco with rocket, a flathead tail, and top with salsa mix & sour cream
Sprinkle with chopped coriander and finely chopped red & green chilli
Wrap it up and enjoy!
Tip: add chopped mango to the salsa for a sweet taste of summer
