Ingredients:
500g Skinless Boneless fish
Snapper, Sea Bream, Morwong, Mullet are all ideal
250ml lemon juice
125ml lime juice
1 red chili
1 large red onion
1 small tin coconut cream
2 tomatoes
Half an avocado
2 spring onions
Salt & pepper
Method:
Cut fish into small pieces and place in a bowl and cover with lemon & lime juice, plus a crack of salt and pepper
Place in the fridge and allow to marinate for 30mins to 1 hour
Dice tomatoes and red onion, slice chilli and spring onion
Once fish has marinated, add diced & sliced ingredients along with coconut cream and mix together
Top with diced avocado and serve as a salad with fresh crusty bread
