Serves 2
Ingredients:
1kg Live Local Mussels
1 tin crushed tomato
2 cloves garlic (crushed)
1 brown onion (chopped)
2 teaspoons crushed chili paste
1 tablespoon olive oil
1 cup white wine
½ cup parsley (finely chopped)
Crusty Bread
Method:
In a large pot, heat oil & sauté onions & garlic
Add chili, white wine & tin of tomatoes
Quick stir then add mussels & stir again
Cover with lid & shake occasionally, cooking for around 3 minutes
Remove lid & pick out mussels as they open, placing them in a large bowl
Once all mussels are cooked and moved to a bowl, pour remaining sauce over the top
Sprinkle with chopped parsley & serve with crusty bread
